醸造方法：9月末もしくは10月初旬に収穫されたブドウは、大きな窓を配した屋根裏部屋にて竹製ラックで2月中旬まで陰干し。貴腐菌が付くのはコルヴィーナ種のみ。その後45日間スラヴォニアオークの大樽で自然低温発酵し、そのままマロラクティック発酵へと続く。熟成は、60%が30-40hlのスラヴォニアオーク大樽で、40%は600Lスラヴォニアオーク樽とアリエ産オーク樽（新樽、2年樽、3年樽、4年樽）で36ヶ月間熟成。最低6ヶ月間瓶内熟成。
