The resulting cloudy juice is then delicately transferred into a blend of new and seasoned French oak puncheons and barriques, each vessel contributing its own subtle nuance to the final product. Spontaneous fermentation ensues, guided by the whims of wild yeast over the course of three weeks, infusing the wine with a tapestry
